Beef

All retail cuts, sides, and quarters are from grain-fed cattle. Our beef is Extra Trim (less than 1/4 inch), and approximately 90% of the cuts are boneless. Most of the meat would grade U.S. Select or U.S. Choice. The meat is naturally dry-aged to increase tenderness and to give the beef a rich and "beefy" flavor.


Cured and Smoked Products

The Barbecue Beef is made from slow cooked and hickory smoked brisket sliced and smothered with barbecue sauce, vacuum packaged and ready to heat and eat. We also process beef jerky from sliced beef rounds that is a flavorful, long-lasting snack. The slices are cured in brine, peppered, smoked and dried. Smoked Beef Snack Sticks and Smoked Pepperoni Snack Sticks are made with quality meat ingredients, they are seasoned, smoked, and cooked, ready to eat. These items are great snacks for taking hunting, fishing, or camping and taste great with your favorite beverage.
 


Sausages

   
We offer several flavorful and lean sausages:
       
Beef Stick ~ Semi-dry, all beef sausage with a unique flavor only hickory smoke can provide. This
          fully cooked sausage is outstanding with cheese and crackers.
       
Vandal Franks ~ All beef skinless 1/4 pound frank, hickory smoked and fully cooked. Very lean and
       
flavorful.
