Beef 2020-Next offering May 21-23, 2003

As a joint program with the Idaho Beef Council, the purpose of Beef 2020 is to provide producers, packers, and other interested individuals an in-depth look at the end product of production.

Many individuals have participated and followed several live animals through the University of Idaho Meat Laboratory. They evaluate the animals live for quality and quantity of edible products and then spent the next day cutting carcasses into retail ready primals. The value of each animal is computed and the attendees have the opportunity to assess their efforts of visual evaluation as related to carcass cutout.
